Shrimp Burger w/Chipotle Aioli Raspberry Jam

  • 1 lb shrimp
  • 1 clove garlic
  • 1/4 c parsley
  • 2 tbsp red onion
  • 3 tbsp Adobo seasoning
  • 1 tbsp pepper
  • 1 Egg
  • 1/2 c flour
  • 2 tbsp olive oil


Chipotle Aioli Sauce


Chop the shrimp into small pieces no bigger than the size of a pea. You can also chop it in a blender. Place all of the shrimp in a bowl along with the flour, egg, finely diced onion, chopped parsley, salt and pepper. Stir until well combined. Pour the olive oil in the skillet and preheat on low.

Form the batter into balls the size of a small fist and flatten slightly. Place the patties in the skillet and turn the skillet up to medium-high. Cook the patties for 4 minutes per side until golden in color. To keep the patties from falling apart when cooking, make sure the pan is hot before adding them in, and leave them to cook for 4 minutes without touching so that a golden crust forms before flipping over.


While the patties are cooking, mix the mayo, jam, and peppers in a small food processor (or blender). Puree chipotle peppers and adobo sauce for 30 seconds. It should be thick and paste like, it will not be smooth. Transfer to a bowl and add remaining ingredients. Stir the aioli until it is the consistency that you desire. Spread the aioli on your shrimp burger and add additional toppings that you like.
